Bonisimo Red Snapper Fillet Veracruz Style

Ingredients:

  • 4 Bonisimo del Mar red snapper fillets
  • 3 tomatoes
  • 1 onion
  • 2 cloves garlic
  • 12 pitted olives
  • 10 capers in vinegar
  • 1 teaspoon oregano
  • 4 chili peppers in vinegar (optional)
  • 5 tablespoons olive oil
  • Salt and pepper

 

Preparation:

  1. Blend a tomato with half the onion and garlic cloves. Set aside for a moment.
  2. Cut the tomatoes and the remaining onion into very small cubes. Set aside for a moment.
  3. Fry the onion over medium heat until transparent, add the tomatoes and stir for about two minutes. Stir in what you blended, olives, capers, chilis and oregano. Season with salt and pepper and fry until it thickens.
  4. Separately, season the Huachinango Bonisimo with salt and pepper and fry the fillets for two minutes on each side.
  5. Serve the Huachinango Bonisimo with the sauce.

 

Note:Can be prepared with other varieties of Bonisimo del Mar fish, including Bonisimo del Mar Robalo, Bonisimo del Mar Grouper, Bonisimo del Mar Salmon, Tilapia Fillet, Basa Fillet, etc.
